Bouillon de Petits Crabes (Stew of Small Crabs) is a traditional Mauritian recipe for a classic stew of small crabs in a tomato-based sauce flavoured with onion, garlic, ginger and hot chillies. Ingredients:

1kg small crabs, scrubbed
1 onion, peeled and chopped
250g tomatoes, washed and diced
3 garlic cloves, grated
3cm length of ginger, peeled and grated
2 hot chillies, finely chopped
1 tsp fresh thyme, chipped
4 tbsp parsley, copped
salt and freshly-ground black pepper, to taste
2 tbsp oil

Method:

Heat the oil in a pan, add the onion and fry for about 6 minutes, or until lightly browned. Add the garlic, ginger, chilli, tomatoes, thyme and parsley then fry, stirring constantly, for 2 minutes.

Now add the crabs and cook for 5 minutes, stirring constantly, until the crabs begin to colour.

Pour over 1l of water and season to taste with salt and black pepper. Cover and cook gently for 15 minutes.

Serve hot.
