Slice the sausage crosswise into 1cm pieces then brown in the salad oil in a large casserole of Dutch oven. Add the onion, garlic, carrots and basil and cook for 5 minutes. Now add the courgettes, tomatoes (with liquid), bouillon, cabbage, salt and pepper.
Bring the soup to a boil then reduce the heat and simmer for 1 hour, covered. Add the beans (and their liquid) then cook for another 20 minutes. Garnish with fresh parsley. This is another of those soups that tastes even better when re-heated the next day.
