Koko is a speciality of the Central African Republic. They are the young, dark green and shiny pine-needle like leaves of a rainforest vine. They are typically sold in foil packets with each packet containing about 100g leaves.
Ingredients:
200g koko leaves, finely chopped
500g beef, finely chopped
50g peanut butter
1 small onion, sliced into thin strips
2 tbsp groundnut oil
2 beef bouillon cubes
1l cold water
salt, to taste
Method:
In a bowl, mix the peanut butter with 2 tbsp boiling water until you have a smooth paste.
Heat the groundnut oil in a large pan. Add the meat and onion and fry until the meat is nicely browned all over. Pour in the 1l cold water then add the peanut butter mixture and the bouillon cubes.
Bring the mixture to a boil, reduce to a simmer and cook gently for about 20 minutes, or until the sauce has thickened to the consistency of a good béchamel.
Take off the heat, stir in the koko leaves and serve immediately.
