Epis (Haitian Green Seasoning)

This is the classic Haitian raw/green seasoning that's the equivalent of other Caribbean countries' green seasonings.
Ingredients:
7 cloves
12 garlic cloves
2 bouillon cubes
a few sprigs of thyme
2 celery sticks
1 green bell pepper
1/2 bunch flat-leaf parsley
1 onion
3 shallots
7 spring onions
80ml vinegar
60ml oil
juice of 1 lime
Method:
Slice the vegetables into small pieces pieces (this helps them break up in the food processor).
Using a food processor, first grind the cloves, bouillon cubes, garlic, thyme and celery. If you overcrowd the machine with everything at one time, the smaller things will not grind properly.
Now add the parsley, onions, spring onions, shallots and bell pepper. Pulse to chop, continuing until the vegetables are very fine (but do not render to a puree).
Add the vinegar, oil and lime juice. Now continue processing the ingredients until smooth.
Store in a glass or other non-reactive jar in the refrigerator.
