These recipes, all contain Ghee as a major wild food ingredient.

Ghee is a form of Clarified Butter that's simmered until all the moisture evaporates and the milk solids begin to brown, giving the resulting butter a nutty, caramel-like flavour and aroma. This final step of cooking gives ghee its distinctive taste and also provides ghee with a longer shelf life and a much higher burning point than other clarified butters, which makes it practical for use in just about any sautéing and frying uses.
