Parboiling is the process of boiling vegetables until they are only just slightly cooked. This technique is often applied to potatoes and other root vegetables prior to roasting. The technique can also be used for rice and for meats, such as pork or chicken, before it is cooked on the barbecue, in order to ensure they're fully cooked throughout.
