Ingredients:

1kg potatoes, peeled and parboiled
1 medium onion, peeled and finely chopped
2 garlic cloves, minced
1/2 tsp ground turmeric
1/2 tsp piri-piri chilli sauce
1/2 tsp ground cinnamon
1/2 tsp ground coriander seeds
1 tsp tomato purée
1 tbsp lemon juice
1 tbsp fresh parsley, chopped
salt, to taste
2 tbsp cooking oil

Method:

Heat the oil in a pan, add the onions and fry for about 6 minutes, or until they begin to turn golden. Stir in the garlic at this point and cook for 30 seconds more.

Add all the ground spices and stir-fry for 1 minute then stir in the tomato purée, piri-piri sauce, lemon juice and season with salt to taste.

Slice the parboiled potatoes into 1.5cm pieces and add to the pan. Stir well to combine then pour in 180ml water. Bring to a simmer and cook, uncovered, for about 10 minutes, or until the potatoes are tender and the suce has reduced and thickened. Serve hot.
