Seafood and barley were the traditional Manx staples and like many sea-dependend communities everything that could be eaten was eaten. This included limpets, which were available even during the hardest of times. This is the trandtional method of preparing them.

Ingredients:

1.1l (1 qrt) limpets.
Hot butter or lard.

Method:

Soak the limpets (still in their shell) overnight in a salt and water brine. When ready to cook, drain them then place in a large pot of boiling water.

Cook for 2 minutes to parboil (this will also remove any excess salt) then drain and extract the meats from the shell. Clean the meats well.

Melt about 3 tbsp lard in a frying pan over medium heat. When the lard is hot add the limpet meats and fry until nicely browned all over.

Serve hot with bread and butter.
