These are the Punjabi version of French fries (French-cut or julienned potato chips) that seasoned with chaat masala after cooking. These are typically served with battered fish as Amritsar Fish and Chips.
Ingredients:
2 large potatoes
2 tbsp rice flour
2 tsp
chat masala
mint and rosemary, finely chopped, to season
Salt to taste
Oil for deep frying
Method:
Peel the potatoes and cut into batons or long sticks. Rinse in water. (If you are not going to cook the potatoes immediately, keep then immersed in water (this will stop them going brown).
Bring a pan of water to a boil. Add the French-cut potatoes. Parboil or simmer until half cooked (about 5 minutes). Drain in a colander then pat dry with paper towels and dust with the rice flour. Set aside.
Meanwhile, heat oil for deep frying (or use a deep fryer set to 180C). When the oil is hot (but not smoking), add the chips. Fry until golden (Fry in batches if needed if using a wok or pan) and do not overcrowd the pan.
When the chips (fries) are golden, drain onto an kitchen paper. Season the chips with chat masala, herbs (mint and/or rosemary are typical) and salt.
