Kpalugu is the Ga name for the fermented seeds of the locust tree, Parkia biglobosa (which is known as Dawadawa or stink bean). .
Ingredients:
700g beef
300g kpalugu (fermented stink bean pulp)
1 large onion, coarsely chopped
2 hot chillies
4 tomatoes, cored and chopped
3 fresh okra, sliced into thin rings
salt, freshly-ground black pepper and hot chilli powder, to taste
Method:
Cut the meat into large cubes. Combine the onion and chillies in a mortar and pound to a coarse paste.
Bring a pan of lightly-salted water to a boil, add the meat and boil for 90 minutes, or until the meat is tender.
Dissolve the kpalugu paste in warm water to yield a liquid. Add this to a pan with the tomatoes and okra. Bring to a simmer then add the drained beef and the onion and chilli mixture.
Bring to a simmer, cover and cook for about 30 minutes or until the sauce has thickened.
