This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. These recipes, all contain Crème Anglaise as a major wild food ingredient.

Crème Anglaise is the traditional French term for the traditional British custard desset sauce made from egg yolks, sugar, milk and vanilla. Proper home-made custard is wonderful, but make certain that you follow a decent recipe and heat it just enough to thicken but not so much that it curdles.

One cheat is to add a little cornflour to the mixture which will help stabilize the egg yolks.
