This is another version of the classic British vanilla custard, also known as Créme Anglaise.

Ingredients:

10 large egg yolks
3 tbsp sugar
850ml milk
1 vanilla pod, split lengthways (or 1 tsp vanilla extract)
pinch of salt

Method:

Combine the egg yolks, sugar and salt in a bowl and whisk until pale and creamy.

Meanwhile scrape the seeds from the vanilla pod and add these along with the milk and the vanilla pod to a saucepan. Heat the mixture until bubbles start forming around the edges of the pan (scalding the milk, as it's called) then immediately take off the heat and slowly whisk the milk into the egg yolk mixture. Take out the vanilla pod then place the bowl over a pan of gently-simmering water and allow the custard to cook, stirring constantly, until it's thickened enough to coat the back of a wooden spoon. But do not allow the mixture to boil.

Either serve immediately as a custard to accompany desserts, or cool and store in the refrigerator for future use (it will keep for 2 days and can be used as a sauce, a topping for trifles or a filling for charlottes).
