Lemon Custard

This is an excellent custard in its own right, but is also the traditional custard mix used for trifles.
Ingredients:

vanilla pod, split lengthways
100g sugar
1 tbsp cornflour
4 egg yolks
2 whole eggs
420ml milk
300ml double cream
zest of 1 lemon, pared into thin strips with a potato peeler
Method:
Scrape the seeds from the vanilla pod into a large bowl and mix with the sugar and the cornflour. Slowly whisk in the egg yolks then add the whole eggs and whisk to combine. Meanwhile, place the remaining vanilla pod, milk, cream and lemon zest in a saucepan. Bring to a simmer and cook gently for 5 minutes (do not allow to boil).
Gently strain the milk mixture into the bowl containing the eggs, whisking all the while, until all the milk mixture has been combined. Tip the resultant custard back into the saucepan and return to the heat. Cook, whisking constantly, until the custard has thickened and is just about to bubble. Remove from the heat and strain into a clean bowl.
Serve immediately, if using as a custard. Allow to cool to room temperature if using for trifles.
