Coffee Custard Cups: An American dessert of baked coffee custard served topped with cocoa powder.
Ingredients:
300ml double cream
150ml whole milk
6 large egg yolks
60g caster sugar
2 tbsp (level) coffee granules
1 tbsp cocoa powder, for dusting
Method:
Pour the cream and milk into a pan and bring to a boil.
Lightly beat the egg yolks in a bowl, whilst whisking constantly slowly pour over the boiling cream mixture. Continue whisking vigorously to combine (this ensures that the eggs do not cook and scramble). Stir in the sugar until it has completely dissolved.
In the meantime, dissolve the coffee granules in 2 tbsp boiling water and stir into the cream mixture. Strain the resultant mixture through a fine-meshed sieve into a jug then divide between six coffee cups (or small ramekins). Sit the cups in a roasting tin and pour in enough water to come half way up the sides of the cups.
Transfer the tin to an oven pre-heated to 150°C (Gas Mark 2) and bake for between 45 and 60 minutes, or until the custard mixture has just set. Remove from the oven and carefully lift out the cups.
Set aside to cool then transfer to the refrigerator to chill for at least 1 hour.
Dust the tops of each cup with cocoa powder and serve.
