These recipes, all contain Pesto as a major wild food ingredient.
The classic green (basil) pesto originates from Genoa and it's made as a blend of pine nuts, with basil, parmesan or pecorino cheese along with garlic and olive oil. Red pesto is similar, but is based on sun-dried tomatoes or grilled red peppers rather than basil.
Recent variations include rocket, watercress or parsley substituted in whole or in part for the basil and walnuts, hazelnuts, pistachios or sesame seeds substituted for the pine nuts.
