Nasturtium Leaf Pesto: A modern British recipe for a sauce made from a blend of garlic, nasturtium leaves, walnuts, Parmesan cheese and olive oil.
Ingredients:
125g nasturtium leaves
4 garlic cloves
360ml olive oil
a few shakes of Tabasco sauce
100g walnuts
4 tbsp grated Parmesan cheese
Method:
Combine all the ingredients in a food processor and process until smooth.
The pepperyness of the nasturtium leaves makes this a zingy pesto that goes well with grilled fish, chicken and even beef. However, this is not a pesto that you can store in jars. Either make and use fresh (nasturtiums grow like mad) or freeze in ice cube trays and use, as needed.
