As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Passata recipes added to this site.
These recipes, all contain Passata as a major wild food ingredient.
Passata is a liquid made from ripe tomatoes that have been puréed and sieved to remove the skin and seeds. It's sold in jars or cartons and can be smooth or chunky depending on the level of sieving. This makes an useful store-cupboard standby as it can be used in soups, sauces, pasta sauces, casseroles (essentially anything that requires a concentrated tomato flavour).
