Ingredients:

500g pork, cut into small chunks
225g pork liver, diced
5 pieces of chorizo sausage, cut into small pieces
4 potatoes, peeled, finely diced and fried until golden
1 green bell pepper, diced
1 red bell pepper, diced
120g cooked chickpeas
2 tbsp seedless raisins
1/2 tsp paprika
250ml pork or chicken stock
2 tsp patis (fish sauce)
3 tbsp oil
1 tbsp asuete oil (oil coloured red by frying with Annatto Seeds)
3 tomatoes, diced
1 small head of garlic, peeled and minced
1 medium onion, diced
salt and freshly-ground black pepper

Method:

Combine the vegetable oil and annatto oil in a wok or large pan. When hot, add the garlic and onion and stir-fry for about 4 minutes, or until tender. Now add the pork, liver, chorizo, tomatoes, bell pepper, paprika, fish sauce and stock. Bring the mixture to a boil, reduce to a simmer then cover the pan and cook for 20 minutes, or until the pork is tender.

Stir in the chickpeas, potatoes and raisins. Return to a boil then continue cooking for a further 2 minutes, or until heated through. Season to taste with salt and black pepper. Serve hot, accompanied by boiled rice.
