These recipes, all contain Pancakes as a major wild food ingredient.
Pancakes are thin cakes formed by frying a batter made of milk, eggs and flour and cooked until it's golden brown on both sides. They can be eaten simply with lemon juice and sugar or honey (as is traditional on shrove Tuesday) or they can be filled with fruit, syrups, ice cream or chocolate sauce. Pancakes can also be filled with savoury fillings such as meat, mushrooms cheese, vegetables, mushrooms — pretty much any thing you can imagine. I fill pancakes with a mincemeat and tomato filling, place several in a baking dish, put cheese sauce on the top and bake in the oven.
Pancakes are made from a wide variety of flours and in a range of styles in many countries. French pancakes are made slightly thinner and are called crêpes. Scotch pancakes are small and thick, usually cooked on a griddle and sometimes flavoured with sultanas or raisins. There is also the Russian blini, the paper-thin Chinese pancake that's served with Peking duck and Italian crespelle, and so on.
