Five-spice powder is a classic mix of spices commonly used in Chinese cookery. It is a finely-ground brown powder made from star anise, fennel seeds, cloves, cinnamon and Sichuan pepper. This spice mix is generally available and a good blend will be fragrant and spicy but with a certain sweetness to it.
