Asian-style Seared Sea Bass

Asian-style Seared Sea Bass is a modern Fusion recipe for a classic dish of sea bass with an Asian spiced whole sea bass that's cooked on a barbecue, served garnished with ginger and spring onions that's served on a plank with boiling sesame oil poured over. Ingredients:

1 whole sea bass, gutted and scaled
1 tsp Chinese five-spice powder
2 tbsp groundnut oil
2 tbsp soy sauce
1 tbsp lime juice
1 tbsp honey
3cm length of ginger, peeled and cut into matchsticks
4 spring onions, cut into 3cm lengths and shredded
60ml toasted sesame oil
4 lemon slices
sprig of fennel

Method:

In a bowl whisk together the five-spice powder, groundnut oil, soy sauce, lime juice and honey. Cut four slashes in both sides of the fish then brush the marinade all over the fish both inside and out. Stuff the body cavity with the lemon slices and fennel then place the fish in a fish basket.

Set on a pre-heated barbecue over hot coals and cook for about 8 minutes per side, or until cooked through (when done the fish will flake easily with a fork). Sit the fish on a plank and garnish with the spring onions and ginger.

In a small pan, heat the sesame oil until just smoking. Immediately pour over the fish and serve. The oil will crisp the fish skin and flavour it with the ginger and spring onions.
