Baking powder is a raising agent used in the production of cakes and breads. Commercial preparations contain sodium bicarbonate and tartaric acid in combination with dried starch which absorbs any moisture during storage. When the chemicals become moist and warm the tartaric acid reacts with the sodium bicarbonate creating sodium tartarate and releasing carbon dioxide. It's the carbon dioxide attempting to escape the cooking batter that causes the food to raise.
Because baking powder reacts when moist it has a limited shelf-life, but you can create your own by mixing 1 tbsp of bicarbonate of soda with 2 tbsp cream of tartar and 1 tsp potato starch (ensure you measure the quantities carefully and use level spoonfuls.
