South Africa is called the 'Rainbow Nation' and this recipe is a classic example of the country's multi-cultural origins and modern nature. It was the Afrikaans settlers who brought the initial bobotie (a custard topped meatloaf) dish to South Africa. Cape Malay immigrants brought curry powder with them, which was soon incorporated into bobotie recipes instead of the original spice mix. This gives the dish a new twist by frying the base bobotie mix in spring roll wrappers as a starter or snack.
Method:
Lay a spring roll wrapper in front of you so that it forms a diamond shape. Use your index finger to wet all the edges with water or a cornstarch/water paste. Place approximately 2 tbsps of the bobotie meat mix near the bottom. Roll over once, tuck in the sides, and then continue rolling. Seal the top. Continue until all the wrappers and filling have been used up.
Add oil to a depth of 5cm in a wok and when hot use to deep fry the spring rolls over medium-high heat. When golden brown and cooked through remove with a slotted spoon and allow to dry on a wire rack. Serve with a chilli dipping sauce.
