Bobotie (Curried Meat Loaf)

Ingredients:

2 thick slices stale white bread with crusts removed, processed into breadcrumbs
30ml sunflower oil
1 onion, thinly sliced
1/2 tsp cloves
1½ tsp crushed garlic
1½ tsp salt
3 tsp South African Curry Powder
1½ tsp turmeric
600g steak mince
2 eggs
30ml hot water
1½ tbsp lemon juice
30g sugar
4 bay leaves
1 egg, lightly beaten
150ml milk

Method:

Heat the oil in a large frying pan and fry the onion until golden (10 minutes). Add the cloves, garlic, salt, curry powder and turmeric and fry for a further 5 minutes. Add to the mince along with the breadcrumbs, eggs, hot water, lemon juice and sugar and mix-in well.

Spoon the mixture into a well-greased ovenproof dish and bake in an oven pre-heated to 160°C (320°F/Gas Mark 3) for 40 minutes, or until golden brown.

Remove from the oven, beat the egg and milk well and pour over the bobotie. Add the bay leaves to the top and bake for a further 8 minutes at 180°C (350°F/Gas Mark 4).

Serve with saffron rice or boiled vegetables.
