Ingredients:
140g plain flour
1/4 tsp salt
180ml water
oil
Method:
Combine the salt and flour in a bowl and mix thoroughly. Form a well in the flour then mix in the water to form a batter. Cover with a clean cloth and set aside to rest for 1 hour. The batter you are aiming for should be fairly thick, but still thin enough to drop off the back of a wooden spoon. Adjust the flour and water levels, as needed.
Lightly grease a non-stick pan and set on medium-low heat. Turn the heat down to low and add a heaped tablespoon of batter to the centre of the pan. Quickly spread the batter out to form an even circle about 15cm in diameter. Continue smoothing down the batter as the skin cooks.
Cook briefly, until set on the base and the edges begin to curl. Remove carefully and allow to cool before refrigerating or freezing until needed.
