Soupou Tehou (Beef Soup) is a traditional Guinean (from Guinea-Conakry) recipe for a classic stew of beef and onions with carrots, potatoes, cassava and cabbage in a tomato base flavoured with hot chillies. Soupou Tehou (Beef Soup): A Guinean recipe for a stew of beef and onions with carrots, potatoes, cassava and cabbage in a tomato base flavoured with hot chillies.

Ingredients:

500g beef, cubed
3 tbsp groundnut oil
2 onions, finely chopped
2 tbsp tomato purée
4 garlic cloves, crushed
1 carrot, diced
2 potatoes, chopped
1 tbsp ground black pepper
hot chillies, to taste
2 Maggi cubes
salt, to taste
1.5l water
200g cassava, peeled and cubed
1 small white cabbage, quartered and cored
thyme, leaves only

Method:

Season the beef with pepper, salt, garlic and 1 chopped onion.

Heat the groundnut oil in a large pan, add the beef and fry for about 5 minutes, or until browned all over.

Mash the tomatoes in a bowl, then stir in the tomato purée. Mix well to combine then add the tomato mixture to the beef mixture and stir in 500ml water. Bring to a simmer, cover and cook for 20 minutes, or until the meat has absorbed most of the liquid.

Add the vegetables and the remaining onion. Pour in the remaining 1l water and crumble in the Maggi cube, then add the thyme.

Season to taste with salt, bring to a simmer and cook, uncovered, for 20 minutes.

Serve hot, accompanied by rice.
