Kyrgyz Shashlik is a traditional Kyrgyz (from Kyrgyzstan) recipe for a classic dish of cubed lamb meat marinated in kefir and spices juice, with onions and garlic and spiced with cayenne pepper that are grilled on a barbecue before serving with kasha. Ingredients:
1.5kg lamb meat, cut from the leg
2 small onions, finely chopped
4 large garlic cloves, finely chopped
2 large shallots, minced
2 tbsp fresh parsley, finely chopped
600ml kefir Kyrgyz shashlik spice blend
4 tbsp vegetable oil
8 dessert spoons cayenne pepper
Method:
Trim any fat and sinew from the lamb then cut into 5cm chunks. Place in a small bowl and mix with the onion, garlic, shallots, parsley, cayenne pepper, shashlik spice blend and kefir. Mix thoroughly then cover and refrigerate over night to marinate.
The following day, place your wooden skewers in a bowl of water and allow to soak for at least 1 hour. Remove the meat from the marinade and pat dry then thread onto skewers. Cook on a barbecue or under a grill (broiler), turning frequently (about 12 minutes for slightly pink and 20 minutes for well done).
Remove from the skewers, plate out and serve with buckwheat kasha
