Though not a typical British Indian Restaurant (BIR) curry, this is still cooked in the BIR style. Interestingly, it uses green tomatoes as the acidifying agent rather than tamarind or vinegar.

Ingredients:

500g stewing beef, cubed
6 green tomatoes, halved lengthways and with each half cut into three pieces
2 onions, sliced into thin wedges
4 garlic cloves, chopped
400g tinned, chopped, tomatoes
2 cayenne chillies, finely chopped
400ml restaurant-style curry sauce
2 tbsp sultanas
4 tbsp jalfrezi curry spice blend
2 green chillies, de-seeded and sliced into thin strips, to garnish
4 tbsp coriander (cilantro) leaves, shredded
oil for frying

Method:

Heat the oil in a flame-proof casserole. Add the beef and fry until nicely browned all over. Remove the beef with a slotted spoon and set aside.

Add more oil if needed then place the onions and garlic in the pan and fry for about 5 minutes, or until soft. Scatter over the jalfrezi curry spices then stir in the chopped red chillies. Stir and fry until aromatic then add the curry sauce and chopped tomatoes.

Return the beef to the pan and stir in the green tomatoes and sultanas. Bring the mixture to a simmer then cover and transfer to an oven pre-heated to 180°C. Cook for 2 hours, or until the meat is very tender (top-up with water as needed).

When done, turn into a serving dish and garnish with chopped coriander and the green chilli strips. Serve accompanied by plain rice.
