Türlü (Meat, Vegetable and Okra Stew) is a traditional Armenian recipe for a classic stew of lamb or beef with vegetables and green bell peppers cooked in a tomato-based sauce with okra. Ingredients:
3 tbsp olive oil
1 onion, sliced
2 garlic cloves, crushed
565g lamb or beef, cubed
2 large green bell peppers, cubed
225g green beans, strings removed and cut into thirds
3 small courgettes (sliced into rings)
1 medium aubergine (eggplant) peeped and cubed
300g okra, tops removed
1kg tinned plum tomatoes, chopped (with juice)
3 tsp ground cumin
1 tbsp salt
1/2 tsp freshly-ground black pepper
1/8 tsp cayenne pepper
juice of 1 lemon
Method:
Heat he oil in a large pan (about 6l) add the onion and meat and fry until just golden brown (about 12 minutes). Add the garlic and cook for 1 minute more then stir-in all the remaining ingredients (except the lemon juice). Bring to a simmer and cook for 5 minutes before adding the lemon juice.
Return to a simmer and cook gently for 90 minutes. This stew is best allowed to cool over night before being re-heated and served the following day (this way the flavours have a chance to meld).
Serve hot with a pilaf (preferably a bulgur wheat pilaf).
