Zhug is originally a spicy Yemenite condiment that's become a part of Israeli cuisine.
Ingredients:
115g dried red chillies, (seeds removed for a milder effect)
4 garlic cloves
1 tsp salt
¼ tsp ground black pepper
1 tsp ground cumin
3 tbsp olive oil
Method:
Place the chillies in a large bowl, cover with about 1l warm water and set aside to soak for 30 minutes to rehydrate.
Drain the chillies, squeezing out as much of the excess liquid as possible. Transfer to the bowl of a food processor (reserve the soaking liquid).
Add all the other ingredients to the food processor then pulse until a thick paste forms. Add more oil and chilli soaking liquid as needed.
Store in an air-tight container where it will keep for up to a month in the refrigerator.
