Plantain Pilé à la Sauce d'Arachide (Crushed Plantains with Peanut Sauce)
Plantain Pilé à la Sauce d'Arachide (Crushed Plantains with Peanut Sauce) is a traditional Cameroonian recipe for a classic vegetarian dish of plantain and cassava mash served with a tomato, peanut and chilli sauce. Ingredients:
For the Plantain:
1kg plantains
1 large cassava root
For the Peanut Sauce:
4 dessert spoons peanut paste (peanut butter)
1 small tin of crushed tomatoes
1 onion
1 garlic clove
1 hot red chilli
400ml water
2 tbsp groundnut oil
1 Maggi cube
salt and freshly-ground black pepper, to taste
Method:
For the crushed plantains: peel and chop the plantains and cassava. Add to a pan, cover with water, then bring to a boil, reduce to a simmer and cook for about 30 minutes or until tender. Drain the mix and allow to cool, then mash to form a paste.
Shape these into large balls and serve to accompany the peanut sauce.
For the peanut sauce: heat the oil in a saucepan, add the onions, garlic and tomatoes and fry fro 5 minutes. Stir in the water, bring to a simmer, cover and cook for 10 minutes.
Stir in the peanut butter until smooth then return to a simmer and cook, covered, for 15 minutes more.
Season to taste with salt, black pepper, the hot chilli and Maggi cube. Cook for about 5 minutes or until the chilli is soft. Mash the chilli into the sauce.
