Mexican Beef Tostada

These crispy minced Beef Tostadas are a quick and easy Mexican dinner made with seasoned meat, refried beans, and fresh toppings, all ready in 30 minutes or less. Two methods of preparing tostada shells from soft corn tortillas are also presented.

Ingredients:

10 tostada shells, (or soft corn tortillas, if making your own tostada shell)
400g refried beans (either home-made or tinned)
500g minced beef (or substitute cooked shredded chicken, pork or beef)
1/4 onion, diced
1 tbsp chilli powder
1 1/2 tsp ground cumin
1/2 teaspoon paprika
½ tsp salt
¼ tsp garlic powder
¼ tsp dried oregano, crumbled
¼ tsp freshly-ground black pepper
1/2 head of lettuce, finely shredded
queso fresco, (or other cheese)
1 large avocado
a href="/recipes/misc-crema-mexicana">Mexican crema (or sour cream)
Salsa, pico de gallo or salsa verde

Method:

If using fresh corn tortillas, you can prepare tostada bases as follows:

For Baked Tostada Shells: Brush the corn tortillas on both sides with oil.

Arrange the tortillas in a single layer on top of a greased baking tray. Lightly sprinkle salt on the tortillas. Transfer to the centre of an oven pre-heated to 200°C and bake for 5 minutes. At this point flip them over and bake them for an additional 5-10 minutes, or until the tortillas are crispy.

For Fried Tostada Shells: Heat about 6mm of vegetable oil in a medium, deep frying pan or skillet.

Once the oil is hot, place one corn tortilla at a time in the oil and cook, flipping half way once it's lightly golden brown.

Transfer the fried tostada on a paper towels to soak up the extra oil.

Lightly sprinkle with salt and allow to cool before serving.

Place a large frying pan over medium heat. Once hot add the minced beef. Cook, breaking any clumps of meat into small pieces with a wooden spoon, until browned. Remove any excess fat rendered by the meat.

Add in the onion and seasonings. Stir to combine and cook for a few minutes more.

Add the refried beans to a microwave safe bowl, or a small skillet over medium heat. Stir in a small scoop of sour cream, or Mexican crema. Cook until warmed through.

To assemble the tostadas, spread a thin layer of refried beans over the tostada shell. Top with a small spoonful of ground beef, then lettuce, cheese, avocado, salsa, sour cream and hot sauce.
