Kapana (Barbecued Beef Strips)

This is a classic example of Namibian street food. Strips of spiced been cooked over a braai (barbecue) or an open flame. This is a Namibian classic that’s juicy, beautifully tender, smoky, cheap, readily available all year round, and can be consumed any time of the day.

Ingredients:

1.5 kg well marbled beef steak
2 tsp kapana spice mix
about 2 tbsp sunflower or olive oil

Method:

Slice the meat into long interconnected strips. This is easiest done as a two-person job with one person holding the long piece of meat whilst a second person cuts it into strips. It’s best to cut into strips between 5mm and 1cm thick (but cut on the thicker side if doing this for the first time).

Arrange the beef strips in roasting dish or casserole strips then scatter over the spice blend and the oil. Using your hands rub the oil and spices well into the meat. Cover the dish with clingfilm then set in your refrigerator to marinate for an hour.

In the meantime, pre-heat your barbecue.

About 10 minutes before cooking remove the meat from the refrigerator and allow to come up to room temperature.

Now arrange the meat strips on your barbecue and cook for about 3 minutes on the first side. Turn over and cook for 3 minutes on the other side. Turn once more and cook for 2 minutes then turn a final time and cook for 2 minutes more.

Serve with bread and your choice of accompaniments.
