Beef Curry with Taro

This is a classic beef curry from Vanuatu, served with taro cooked in coconut milk.

Ingredients:

1kg of beef, cubed
2 tbsp coconut oil
2 garlic cloves of garlic, minced
1 onion, thinly sliced
2 tomatoes, diced
2 tbsp soy sauce
1 tbsp fresh ginger, minced
2 tbsp Polynesian curry powder
1 tbsp Worcestershire sauce
Salt and freshly-ground black pepper to taste

For the Taro:
300g taro, peeled and chopped
400ml coconut milk

Method:

Heat the coconut oil in a large pan over medium heat. Add the minced garlic, ginger and sliced onion. Fry until the onion becomes translucent (about 4 minutes).

Add the beef to the pan and cook until they are browned on all sides.

Stir in the diced tomatoes, soy sauce, Worcestershire sauce and curry powder. Cook for an additional 5 minutes then pour in just enough water to barely cover the ingredients. Bring to a simmer and cook for about 40 minutes, until the beef is tender.

Season with salt and black pepper according to taste.

In the meantime, prepare the taro. Bring a pan of lightly-salted water to a boil. Add the taro pieces and cook for 10 minutes. Drain and return to the pan then pour over the coconut milk. Bring to a simmer and cook for about 15 minutes until the taro pieces are tender and the coconut milk has thickened to a sauce. Season to taste with salt and freshly-ground black pepper.

Serve the beef curry accompanied by the coconut coated taro.
