In cookery, maceration is the soaking of raw, dried or preserved fruit or vegetables in liquid to soften or take away bitterness, and to allow the ingredients to absorb the flavours of the liquid. The liquids most frequently used are alcohols, liqueurs, wines, brandy, sugar syrup or fruit juices. The fruit for making Christmas puddings are usually macerated to infuse them with alcohol and to plump the fruit up.
