Cornish Strawberry Conserve

You can't have a Cornish cream tea without scones, clotted cream and strawberry conserve. This is the traditional recipe for the strawberry conserve part of the cream tea.

Ingredients:

500g (1 lb) hulled strawberries, cut into halves or quarters (these need to be ripe but no over-ripe)
100g (1/2 cup) granulated sugar
1 lemon

Method:

Place the strawberries in a pot. Scatter over the sugar and gently mix to combine. Set aside to macerate for 1 hour.

In the meantime, juice the lemon (use the juice for another recipe), remove and discard the pulp then quarter the left-over peel.

Add the lemon peel quarters to the strawberries then place the pan over medium-hight heat. Bring to a simmer and cook for 3 minutes.

Remove and discard the lemon peel. Use a slotted spoon to divide the strawberry fruit to two jars. Continue simmering the liquid for 3-5 minutes until the volume has reduced by half.

Pour the reduced liquid over the berries. Seal securely with lids, allow to cool, label and refrigerate. The conserve will keep for up to 3 months.
