Forgotten to make your Christmas pudding… don’t worry, with this recipe you can make your Christmas pudding on the day in the microwave (ok, so it’s best if you macerate your fruit overnight) but the preparation and cooking can be done on Christmas day in 20 minutes. It's July 2021 and because of covid our Christmas 2020 was a bit of a damp squib. So, we decided to have a minor Christmas celebration at the end of July. It was a spontaneous thing, and so there was no time to make and mature a Christmas pudding, which is where this recipe came in.

Ingredients:

300g (11oz) mixed dried fruit
Juice of 1 lime
Juice of 1 orange
½ cup brandy

100g (3½oz) butter, softened (plus extra to grease)
3 tbsp cranberry jelly
7 tbsp black cherry jam
2 tbsp runny honey
100g (3½oz) dark brown soft sugar
Finely-grated zest of 1 lime
Finely-grated zest of 1 lemon
2 medium eggs, beaten
100g (3½oz) plain flour
1 tbsp (heaped) mixed spice
½ medium tart apple, peeled and grated
1 carrot, peeled and finely grated

Method:

The night before, combine the dried fruit, lime juice, orange juice and brandy in a bowl. Cover with foil and set aside to macerate overnight.

Grease a 1.2 litre (2¼ pint) pudding basin (or heat proof bowl) and set aside. In a small bowl, stir together the cranberry jelly, black cherry jam and honey. Spoon two-thirds of the mixture into the base of the prepared basin, reserving the remaining mixture.

In a separate bowl, beat together the butter, sugar, eggs, flour, mixed spice, soaked dried fruit (and any left-over soaking liquid), citrus zest, grated carrot and grated apple until well combined. Spoon the mixture into the prepared basin and press a large piece of parchment paper on to the pudding to cover the surface.

Microwave on medium power for 9min until firm to the touch. Leave to stand for 10min before turning out on to a plate. Spoon over reserved cranberry mixture and serve immediately with Amaretto Sauce or white brandy sauce.

The pudding can be assembled up to two hours ahead of time and cooked just before serving. If you have made any cranberry sauce for your turkey, you can mix this with the honey to make the pudding topping.
