This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Crème Brûlée recipes added to this site.

These recipes, all contain Crème Brûlée as a major wild food ingredient.

Crème Brûlée is a classic French custard-based dessert that's topped with a hard caramel glaze. The secret of a good Crème Brûlée is the glaze, which should be just thick enough so it gives a lovely crackle and shatters when gently tapped with a spoon. To produce the perfect golden-brown crust it helps to have a blow torch, but a very hot preheated grill will do a pretty good job.

A good tip is to make the custard ahead of time and keep it well chilled, then sprinkle with sugar just before you put it under the grill. This will prevent the sugar from sinking into the warm custard and resulting in a poor glaze.
