Zhoug

Zhoug is a traditional Yemeni recipe for a hot and spicy chilli-based paste that can be used in a similar way to Harissa (both as a condiment and as a spicy addition to various dishes). The full recipe is presented here and I hope you enjoy this classic Ymeni version of Zhoug.

Zhoug is a classic hot chilli spice paste and relish originating in the Yemen.

Method:

Add the chillies to a blender and purée to a smooth paste. Blend the spices to a smooth powder in a coffee grinder then transfer to the blender along with the parsley, the coriander leaves and the oil.

Blend to a smooth paste, adding a dash of water. If needed add a little more oil then transfer the chillies back to the blender and combine all the ingredients together. This will last for a few days in a sealed jar in the fridge, but is best used fresh.
