Suqaar (Somali Beef Stew)

Ingredients:

300g cubed beef
1l water
1/2 chicken stock cube
1/2 tsp ground cumin
1/2 tbsp crushed coriander seeds
1 garlic clove, crushed
1 potato, peeled and diced
1 carrot, scraped and diced
1/2 green bell pepper, diced
1/2 small onion, finely chopped
1 chilli pepper, finely chopped
1/2 tsp salt
60ml vegetable oil
salt and freshly-ground black pepper

Method:

Combine the beef and water in a pan. Bring to a boil and continue boiling for about 40 minutes, or until the beef is very tender. Drain the water from the pan (reserve this) then add the oil and onions. Cook over medium-high heat for about 6 minutes, or until the onions are tender.

Now add 500ml of the beef cooking liquid to the pan along with the cumin, stock cube, chilli, bell pepper, potato, carrot, salt, garlic and coriander. Stir thoroughly to combine then bring to a boil, cover and continue boiling gently for about 10 minutes. Stir the stew and add more water (or stock), as necessary. Return to a boil, cover and cook for a further 10 minutes.

Check that the vegetables are tender, adjust the seasonings to taste and serve.
