Kelaguen is a Chamorro dish from the Mariana Islands eaten as a side dish or as a main course. Similar to ceviche, a pickling marinade of lemon juice, fresh coconut, green onions, salt and spicy hot peppers or donni' is used to marinate cooked chicken, raw shrimp, fish, tinned spam or beef meat/liver.
Ingredients:
1 tin of Spam, cut into thin strips
4-6 stalks spring onions, sliced thinly
80g freshly-grated coconut
Lemon juice, to taste
Salt, to taste
chillies, to taste
Method:
Lightly pan-fry the spam (for only 1-2 minutes per side) then transfer to a bowl.
Add the spring onions, coconut, lemon juice, salt, and chilli pepper. Mix, taste, and adjust seasonings and lemon juice, as you desire.
