Sauce Gombo et Boeuf (Okra Sauce with Beef): A Burkinabe recipe for a dish of beef and dried fish in a tomato and okra base served with tô.

Ingredients:

100g fresh okra
300g beef, cubed
1 smoked and dried fish, washed and broken into pieces (discard as many bones as you can)
2 onions, chopped
3 fresh tomatoes, chopped
4 tbsp tomato purée
4 tbsp oil
1 Maggi cube
2 garlic cloves, chopped
1 hot chilli
salt and freshly-ground black pepper, to taste
parsley, chopped, to garnish

Method:

Combine the onions, tomatoes and chillies in a mortar and pound to a paste then set aside.

Place the okra in a mortar and pound to a paste.

Heat the oil in a pan, add the beef pieces and fry until nicely browned all over. Stir in the tomato and onion mixture along with the tomato purée. Stir to combine, then bring to a gentle simmer and cook for 10 minutes. After this time, add 1l water along with the dried fish pieces, garlic, hot chilli, parsley, Maggi cube, salt and black pepper.

Allow the ingredients to heat through then stir in the okra. Continue cooking for about 35 minutes, or until the sauce is thick then reduce the heat and cook for 15 minutes more.
