As soon as I found that Middle Eastern curry powder was sold and used in Burundi in Africa I wanted to find a recipe from the Middle East that used this curry powder blend. And here it is, a Qatari Chicken curry using Middle Eastern curry powder. Now I have a whole new region from which I can find curry recipes!

Ingredients:

1.5kg chicken portions
3 tbsp Middle Eastern style Curry Powder
2 tbsp yoghurt (any set yoghurt)
3 onions, chopped
5 red chillies, minced
2 tbsp ginger-garlic paste
3 green chillies, sliced
3 tomatoes, chopped
125ml water
1 tbsp ghee

Method:

In a bowl, beat together the yoghurt and curry powder (add a little water if the mixture is too stiff). Add the chicken pieces to a large bowl, pour over the yoghurt mix then rub into the chicken with your fingers. Transfer to the refrigerator and allow to marinate for 90 minutes.

When ready to cook place a pot over medium heat. When hot add the ghee and use to fry the onions for 6 minutes, until golden. Stir in the chillies and the ginger-garlic paste and stir-fry for 90 seconds.

Mow add the marinated chicken pieces and stir-fry for 10 minutes until coloured. Scrape in any of the remaining marinade then add the tomatoes and water.

Bring to a simmer, cover and cook for 40 minutes until the gravy is thick and the chicken pieces are tender.

Serve hot, accompanied by rice and flatbreads.
