This is a Middle Eastern style curry powder blend that is a common spice blend in the Middle East as well as African countries such as Burundi.

Ingredients:

1 tsp sea salt
1 tbsp red chilli powder (Kashmiri preferably)
1 tbsp ground coriander seeds
2 tbsp ground turmeric
2 tsp garlic powder
2 tsp ground ginger
2 tsp ground cumin
2 tsp mango powder (amchur)
1/2 tsp ground cloves
1 tsp ground cinnamon
1 tsp black cardamom seeds
1 tsp green cardamom seeds
1 tsp ground fenugreek
1 tsp ground fennel seeds
1 tsp carom
2 dried bay leaves, crumbled
1 tsp black mustard seeds
1 tsp black peppercorns

Method:

Combine the whole seeds (black cardamom, green cardamom, carom, mustard seeds and black peppercorns) in a spice grinder with the crumbled bay leaves. Pulse to chop then render to a powder.

Add all the remaining ingredients and pulse to blend.

Turn the mixture into an air-tight jar and store in a cool, dry, cupboard. It will keep well for up to a month.
