Ingredients: 1 generous bunch of mint leaves 1 tsp salt 60g whole, dried, red chillies 5 tbsp tamarind (imli) paste 2 green chillies, chopped
Method: Remove the seeds from the tamarind paste then combine in a blender along with all the other ingredients and purée until it forms a smooth paste. Transfer to a jar and refrigerate until needed.
