Pepre Watra

The name is pepper water and in terms of concept it's very similar to West Africa's pepper soups. Except that here cassava water is used, which yields a cloudy appearance. All the ingredients are also native and it's hard to know whether this is a truly indigenous recipe or is it a melange of African and indigenous influences.

Ingredients:

2l of water
500g of fish, cubed
2 sprigs of flat-leaf parsley
½ onion, chopped
1 tomato, finely chopped
6 allspice berries
3 chillies (yellow madam Jeanet is typical, but habaneros are good), kept whole
1 bay leaf
1 celery stick, finely sliced
salt, to taste
chilli powder, to taste

Method:

Place a large pot over medium heat then add the water, fish, parsley, celery, salt, a bay leaf, chopped onion, allspice berries and the chopped tomato.

When the soup starts to boil, reduce the heat to a simmer and add the while chillies.

Cover the pan and let the mixture simmer for 30 minutes in a covered pan. At the end of this time add chilli powder to taste.

Serve with cassava bread.
