Ingredients:
250g plain flour
250g yellow split peas, cooked until soft
1 tsp of baking powder
200g freshly grated bitter cassava
1 tbs of vegetable oil
1/2 tsp of salt
Water for mixing
Oil for frying
Method:
In a bowl, mix together the flour, the cassava, the baking powder and salt. Add oil and enough water to make a soft dough. Divide the dough into 10 equal portions.
Roll the dough portions out on a work surface heavily dusted with flour. Add 3 tbsp of split peas in the centre of the dough and fold it then roll it out again.
Fry in oil in a frying pan on both sides for about 3 minutes a side over a low heat until golden and heated through.
