Here is a classic vegetarian lentil curry dish from Kenya.
Ingredients:
120g cooked green lentils
1 tbsp onion, finely chopped
1 tbsp
ginger-garlic paste
1 tomato, chopped
1 tbsp
Garam Masala
salt, to taste
1 tbsp oil
chopped coriander (cilantro) leaves, to taste
Method:
Heat the oil in a heavy-based pan. Add the onions and fry for about 8 minutes, or until golden brown.
Stir in the ginger-garlic paste then add the tomato, salt and garam masala. Stir gently to combine the add the cooked green lentils. Bring to a simmer and cook for about 10 minutes, or until the tomato pieces soften. At this point add 120ml water and stir well to combine.
Bring the mixture back to a boil then take off the heat. Turn into a serving dish and garnish with coriander (cilantro) leaves. Serve immediately, accompanied by mukimo (potato and pumpkin mash).
