Ginger-garlic paste is a key ingredient in many Indian curries (and other dishes) making your own and having it ready prepared will speed up the preparation of many Indian dishes. What’s more it’s really easy to make at home. It can also be served as an accompaniment or dip.

Ingredients:

175g (6 oz) fresh garlic cloves peeled (by weight)
175g (6 oz) fresh ginger peeled (by weight)
80ml (1/3 cup) of vegetable oil (groundnut would be typical but use any neutral oil)
1 tsp salt
enough water to form a smooth puree (about 80ml (1/3 cup) as a guide

Method:

Combine garlic, ginger, oil and salt in a blender or food processor. Puree, adding water as needed to form a smooth paste.

Store in the refrigerator. However, discard when it starts to discolour and the flavours fade.
