Mukimo is a classic kenyan dish (the name literally means 'mash') originating with the Kikuyu tribe of Kenya. The dish is an accompaniment, typically made from a blend of potatoes, green peas and pumpkin leaves. Sometimes fresh sweetcorn is also added.

Ingredients:

500g potatoes, diced
1 bunch of pumpkin leaves (kahurura)
100g green peas
100g sweetcorn, cut straight from the cob (optional)
500ml water (about)
salt, to taste
50g butter or margarine, diced

Method:

Combine the potato pieces, peas and maize in a pan with just enough water to cover. Arrange the washed pumpkin leaves on top then cover the pan with a lid.

Cook over medium heat for about 20 minutes, without stirring, or until the potatoes are tender.

Drain off any excess water then add salt to taste along with the butter or margarine (if using). Mash the ingredients coarsely with the back of a wooden spoon (this ensures that the maize kernels stay whole).

Serve as you would mash. Or, if you want to be chefy, line ramekins with clingfilm (plastic wrap), pack the mukimo into this then turn out, remove the clingfilm and serve.

Typically, mukimo is served with a stew, such as ndengu. However, when served at ceremonies such as weddings, mukimo is more typically served with Kachumbari (salsa) and Nyama Choma (Roasted Meat). It also makes an excellent accompaniment to githeri.
